We have been grilled almost every day for the past few weeks!  The weather is gorgeous…not too hot yet and I love that I can avoid a messy kitchen most nights of the week!  We grill a ton of burgers, sausage, venison tenderloin and steaks but when we are wanting a real treat we often grill salmon.  Maddie and I love salmon and its perfect for a keto lifestyle! 

After making my Mexican Street Style Cauliflower a few weeks ago, I have been on a Mexican spice kick.  I mean…we live in Texas and we love the spicy, earthy flavors of chili and cumin!  What’s not to love?! So when I came across a gorgeous salmon filet the last time we were at the store, I had one thing on my mind….spice rubbed grilled salmon.

Grilled Salmon Makes the Perfect Keto Meal

Salmon is a great option if your living a low carb or keto lifestyle.  Salmon is an oily fish that’s packed with a healthy dose of Omega-3 fatty acids and B vitamins…especially B12…and don’t forget the selenium and potassium!  Make sure and get the freshest and best quality salmon you can find.  We prefer wild caught fish and seafood but buy what is available to you and in your price range.  We are limited in our fish options, but our local stores have some vacuum sealed, wild caught options that are great. 

Season It Up!

To season up the fish, I used my assortment of Fiesta Brand Spices to create a quick and easy spice rub.  A combo of cumin, chili powder, garlic, paprika, and cayenne gives amazing flavor to the grilled salmon.  Again, that spiced up, crispy skin…soooo GOOD!

I prefer my salmon grilled with the skin on…crispy skin is where it’s at!  The smoke and flavor you get from the grill is perfect for salmon.  Salmon is firm and fatty, so it can stand up to the grill really well and carries those smoky flavors like a champ!

Grilled Salmon with Cilantro Lime Crema

Ingredients

  • 1 ½ pound salmon fillet cut into four pieces
  • Olive oil

For the Spice Rub:

  • 1 ¼ tsp. dried oregano crushed
  • ¾ tsp. garlic powder
  • ½ tsp. paprika
  • ½ tsp. chili powder
  • 1/8 tsp. Cayenne pepper
  • 1 tsp. salt

For the Cilantro Lime Crema

  • ¼ cup sour cream
  • ¼ cup mayonnaise your favorite
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. chopped cilantro
  • ¼ tsp. salt
  • 1 clove garlic finely minced
  • ¼ tsp. lime zest
  • 1/8 tsp. cumin

Garnish: Chopped Cilantro, Fresh Lime

    Instructions

    • For the Crema: In a small mixing bowl, combine all the ingredients for the crema and stir will to combine. Cover and refrigerate until serving.
    • Preheat your grill to 350-400 degrees.
    • In a small bowl, combine all the ingredients for the spice rub and stir well to combine. Drizzle the pieces of salmon with olive oil and liberally season both sides with the spice mixture. Place the salmon skin side down on the hot grill. Cook about 8 minutes per side and flipping once.
    • To serve: Spoon or drizzle the crema over the grilled salmon and sprinkle with chopped cilantro. Serve with fresh lime.
