Most people agree that one of the best bites in barbecue is that salty, tender bark on smoked beef 🍖 Pile it high on a fresh hoagie bun and add sautéed onions 🧅 mushrooms, and barbecue sauce! 😋
SMOKED BBQ BEEF HOAGIES
Yields 6 servings
Ingredients:
Chuck roast (3-4 lbs.)
2 tbsp yellow mustard
1/3 cup Fiesta Uncle Chris’ Gourmet Steak Seasoning
1 cup spritzing liquid (beef broth, apple cider vinegar, Worcestershire, or even water)
4 tbsp butter
1 large sweet onion, sliced
8 oz. mushrooms, sliced
3 tbsp Fiesta Garlic Pepper
1 bottle of your favorite BBQ sauce
6 hoagie buns
Instructions:
1) Coat the chuck roast with yellow mustard and generously apply Uncle Chris’ seasoning on all sides. For maximum flavor, rest the seasoned meat in the fridge for up to 12 hours prior to cooking.
2) Heat your smoker to 225F and add the seasoned meat. Smoke the chuck roast until the internal temperature reaches 160F (approximately 3-4 hours). Spritz the meat every 30 minutes while smoking to help build that delicious bark.
3) When chuck roast reaches 160F, remove from the smoker and wrap tightly in peach butcher paper or aluminum foil. The peach butcher paper helps develop slightly better bark, but foil will also work fine.
4) Return the wrapped roast to the smoker and continue smoking until the internal temperature reaches 205F. Remove and let rest in the butcher paper or foil for 30 minutes to redistribute the juices.
5) While the meat is resting, combine butter, sliced mushrooms, sliced onion, and Fiesta Garlic Pepper in a large skillet on medium heat. Stir occasionally until onions are translucent and mushrooms are tender. Set aside.
6) Use two forks to shred the smoked chuck roast in a large bowl or aluminum pan.
7) Slice each hoagie roll 2/3 of the way through. Add two large scoops of shredded beef, top the beef with two scoops of the onion/mushroom mix, and then add your favorite BBQ sauce to taste.

Ingredients:
3 pounds boneless, skinless chicken breast, cut into 1 ½” pieces or cubes
1 cup orange marmalade
¼ tsp. Fiesta Cayenne Pepper
½ tsp. Fiesta Orange Pepper Rub or Hamburger Deluxe Seasoning
2 cloves garlic, smashed
½ cup plus 1/3 cup soy sauce, divided
3 - 8 oz. cans whole water chestnuts
2 ½ pounds of regular sliced bacon or 3 12 oz. packages bacon
Wooden skewers
Instructions:
Marinate the Chicken:
Place the cut chicken breast in a large zip top bag and set aside. In a small bowl, heat up the marmalade until warm and melted, but not hot. Add the next 3 ingredients and ½ cup of soy sauce to the marmalade, stir well to combine. Add 1 cup marmalade mixture to bag with chicken. Marinate in the fridge for 4-6 hours. Reserve some marinade for later. In a separate zip top bag, combine the drained water chestnuts and remaining 1/3 cup of soy sauce. Seal the bag and refrigerate with the chicken.
Assemble:
Remove the chicken from marinate and place in a bowl. Place the marinated water chestnuts in another bowl. Alternate placing water chestnuts and chicken on skewer. Now take each skewer and wrap the chicken and chestnut with a piece of bacon. Place the bacon wrapped chicken skewers on the parchment lined sheet pan.
Cook the Chicken Bites:
Preheat oven to 350 degrees F. Bake for 25-35 minutes or until the bacon is crispy, flipping the bites over and brushing them with the reserved marinade during the last 10 minutes of cooking time. Remove from the oven and brush with additional marinade if desired. Serve warm.

3) In a small bowl combine flour, cocoa, baking powder, chili powder, pepper and salt. Set aside. In a mixing bowl, stir together warm melted butter and sugars. Stir in eggs and vanilla and mix well to combine. Add the flour mixture and stir until combined and the batter is smooth. Gently stir in the chopped chocolate.
4) Pour the prepared brownie batter into the prepared pan and bake at 350 for 25-30 minutes or until a tester comes out with crumbs but not batter.
Cool in pan and cut into 12 bars for serving!

¼ cup sliced green onions
Instructions
1.) Preheat oven to 350 degrees. Lightly grease a 9x9 baking pan or your casserole dish of choice and set aside. If using frozen hash browns, make sure they are thawed.
2) In a small skillet, melt butter and sauté onion, bell peppers, and diced Poblano peppers seasoned with garlic powder and salt until translucent and tender.
3) Add the half and half, cream and Taco Seasoning and continue to simmer 3-4 minutes, stirring constantly, until thickened. Set aside.
4) In a mixing bowl, combine the hash browns, sour cream, vegetable mixture and 1 ½ cups shredded cheese; mix well to combine.
5) Spread potato mixture evenly into the prepared pan and top with remaining cheese and green onion.
6) Bake at 350 for 35-45 minutes or until hash browns are tender.

½ cup prepared BBQ sauce, your favorite
1 Tbsp. Apple Cider Vinegar
1 Tbsp. Worcestershire Sauce

To serve: Hamburger Buns, Slider Buns, Corn Tortillas, Creamy Coleslaw, Chopped Cilantro & Purple Onion
Special Equipment: Slow Cooker
Instructions
1) Pat the pork butt dry. Rub the entire outside of the pork with yellow mustard and sprinkle the Pork Rub and Garlic Powder evenly over the outside of the roast.
2) Place the pork in the slow cooker, add the chopped onions and place the lid on the cooker. Cook on low for 8 hours.
3) Remove the pork from the slow cooker, shred using two forks and set aside.
4) Strain the leftover juices from the slow cooker into a small saucepan. Skim the fat off the top with a spoon, if desired.
5) Over medium heat bring the juices to a boil and cook until they reduce to about 1 cup. This should take about 7-10 minutes.
6) Remove from heat, add the BBQ sauce, vinegar, Worcestershire sauce and salt to the reduced juices and mix well.
7) Sprinkle additional Pork Rub over the shredded meat and pour over the sauce mixture and gently toss shredded pork to combine.

3 bell peppers (green and/or any colorful combination of red, orange, yellow)
2 Tbsp butter
½ red onion, diced
2 cups cooked chicken, shredded
1 8 oz can tomato sauce
1 Tbsp Fiesta Brand Chili Powder
2 tsp Fiesta Brand Granulated Garlic Powder
1 tsp Fiesta Brand Paprika
½ tsp Fiesta Brand Ground Comino (Cumin)
2 tsp salt
½ cup chicken stock or water
½ cup frozen corn
1 medium zucchini, diced
1 poblano chili, seeded & diced
1 14 oz can black beans, drained and rinsed
1 ½ cups cooked rice
1 ½ cup shredded Monterrey Jack cheese
Garnish: sour cream, avocado, chopped cilantro
Instructions:
1) Preheat oven to 400 degrees.
2) Fill a stockpot with water and bring to a boil
3) Cut each bell pepper in half vertically to create two “boats”. Remove the seeds and veins.
4) Once the water is boiling, add the pepper halves and cook for 4-5 minutes, till just tender. Carefully remove the peppers from the water and drain on paper towels. Set aside to cool.
5) In a large skillet, over medium high heat, melt the butter and add the chopped onions. Sauté onions until translucent, about 5-7 minutes. Then add the cooked chicken to the onions and stir to combine.
6) Add chili powder, garlic, paprika, cumin and salt to the chicken and cook for another minute.
7) Add the tomato sauce and stock to the chicken and stir to combine.
8) Add corn, diced Poblano, zucchini to chicken mixture, cook over medium-low heat 7-10 minutes.
9) Gently stir the rice and beans into the chicken mixture.
10) Fill the bell pepper boats with mixture and place in a greased casserole dish.
11) Top the peppers with cheese and bake at 400 degrees for about 20 minutes. Serve immediately topped with sour cream, avocado and chopped cilantro.

3 Tbsp. Worcestershire sauce
1 tsp. garlic powder
½ tsp. celery salt

½ Tbsp. hot sauce (e.g., Tabasco)
Instructions:
1) Preheat oven to 250 degrees and line two large sheet pans with parchment.
2) In a large bowl or stock pot, combine the first five ingredients and toss gently to mix. You need the bowl or pot to be large enough to toss or gently stir the mixture together.
3) Combine the melted butter and the next 7 ingredients in a large measuring cup or bowl and whisk to combine.
4) Evenly drizzle half of the butter mixture over the snack mix ingredients and gently toss to coat.
5) Pour the remaining butter mixture over the snack mix and continue to toss until all the ingredients are evenly coated.

Oven Beef Stew 🍲 is a family favorite and a gluten free version of a comfort food classic! This hearty beef stew is cooked almost entirely in the oven resulting in insanely tender beef 😋 and effortless home cooking.

3 Tbsp. oil
3 pounds stew meat
2 ½ Tbsp. Fiesta Uncle Chris’s Gourmet Steak Seasoning
½ Tbsp. Fiesta Garlic Powder
1 large onion, diced
4 ribs celery, diced
8 oz. cremini or white button mushrooms, cleaned & quartered
½ cup dry red wine
4 cups beef stock or broth
2 bay leaves
1 Tbsp. dried parsley
1 ½ pounds baby yellow or red potatoes, halved
8 medium carrots, peeled and cut into ½” pieces
½ cup water
2 ½ Tbsp. cornstarch
1 cup frozen peas
Salt & Pepper
Instructions:
1) Preheat oven to 325 degrees. In a large bowl, add the stew meat and season with the steak seasoning and garlic powder. Toss to coat evenly.
2) Preheat large oven proof 7 qt Dutch oven, over medium high heat, add butter or oil and ½ of the stew meat. Brown on all sides, remove from pan and repeat with the other half of the stew meat.
3) Add the onions, mushrooms and celery to the pot and sauté for 2-3 minutes scraping up any bits left by the meat.
4) Return the meat to the pot and add the wine, beef stock, bay leaves, parsley and pepper. Put the lid on the Dutch oven, place in oven and cook at 325 for 2 hours.
5) Carefully remove the pot from the oven and remove lid. Add additional water or stock if the meat mixture is looking dry. Add potatoes and carrots to the pot, stir to combine and return to oven for another 1 ½ hours.
6) Combine ½ cup water and the cornstarch and stir well to combine. Remove the Dutch oven from the oven. Immediately, add the cornstarch mixture to the stew and stir until thickened.
7) If needed, bring the stew to a simmer on the stovetop until thickened. Add peas to the stew and stir gently.
8) Taste and adjust salt and pepper as desired.
9) Discard bay leaves and serve in bowls, garnished with chopped parsley.

Instructions
1) Melt 2 tablespoons butter in a skillet over medium heat.
2) Add the onion and poblano, season with ½ tsp. salt and sauté until the vegetables are tender, about 3-5 minutes. Add the garlic and cook for another 30 seconds. Remove from heat and set aside to cool.
3) Stir together flour, baking powder, pepper, cumin, chili powder and lime zest; set aside.
4) In a large bowl, combine the corn, green onions, shredded cheese and the cooled cooked vegetables.
5) Sprinkle the flour mixture over the corn mixture and toss to coat the ingredients in the flour. Add the beaten eggs and milk and stir well to combine.
6) To cook the fritters, heat a skillet over medium heat and just cover the bottom of the pan with oil.
7) When the oil is hot, scoop mounds of the corn mixture into the pan, slightly flattening and forming into a round shape.
8) Cook 2-3 minutes until golden, flip and cook for an additional 2 minutes or until crispy, golden brown, adding more oil as needed.
9) Place the cooked fritters on a paper towel to drain any excess oil and allow them to cool for 3-5 minutes prior to serving. Repeat till all the batter is used.
10) Serve fritters warm topped with sour cream and chopped cilantro.

4 lbs Chicken Thighs (10 medium-sized thighs)
1/4 cup soy sauce

2 tbsp olive oil
1.5 tbsp honey
1/4 cup chicken broth
1/2 tsp Fiesta Brand Crushed Red Pepper
2 tsp Fiesta Brand Chicken Rub
1/2 tsp Fiesta Brand Ground Black Pepper
10-12 cloves of fresh garlic (chopped)
Directions:
1.) Mix all the ingredients together except the chicken and broth.
2.) Pour the mixture on all the chicken thighs and marinade in the refrigerator for 1 hour or overnight (We did it overnight)
3.) Preheat oven to 350 °F.
4.) Add marinated chicken to a pan or two, and along with chicken broth and bake for 1 - 1 hour fifteen minutes.
5.) Broil on High for the last 3-5 minutes to get a golden brown color

1 1/4 cup good quality semisweet chocolate chips
Pinch of salt
1 tsp vanilla
Garnish: Whipped Cream
Directions:
1.) In a sauce pan over medium heat, combine the first six ingredients.
2.) Cook stirring constantly, until steaming but do not boil, about 8-10 minutes.
3.) Remove from heat, add the chocolate chips, salt and vanilla and stir until smooth.
4.) Spoon the chocolate mixture into ramekins (about 4 oz), espresso cups or desired serving cups.
5.) Cover with plastic wrap and refrigerate for at least 3 hours.
To serve, top each serving with whipped cream.
