Fiesta Peanut Brittle:

  • 3 cups sugar
  • 3 tsp. butter
  • 1 cup corn syrup
  • 1 tsp. salt
  • 1/2 cup water
  • 2 tsp. baking soda
  • 3 cups raw peanuts

Boil sugar, corn syrup and water until thread spins (310° F). Add PEANUTS and stir continuously. Cook until it turns a brownish gold (5-8 minutes). Remove from stove, add butter, salt and baking soda while stirring vigorously. Pour quickly onto butter board, spread to desired thickness and let cool.


Microwave Peanut Brittle:

  • 1 cup sugar
  • 1 tsp. vanilla
  • 1 tsp. butter
  • 1/2 tsp. salt
  • 2 cups raw peanuts
  • 1/2 cup corn syrup
  • 2 tsp. baking soda

Mix sugar with corn syrup. Add PEANUTS and stir well. Microwave on high for 8-10 minutes stirring well after 4 minutes. Add vanilla and butter. Microwave on high for 2 minutes or until nuts turn brownish gold. Add baking soda. Stir well and spread immediately onto buttered pan. Cool completely before breaking into pieces. (Adjust cooking time to suit your microwave. Sugar and peanut mixture should reach 310° F)
