Enchiladas are a classic Mexican dish dating back all the way to Mayan times. While early enchiladas were little more than cooked meat rolled up in tortillas, modern enchiladas are a staple of traditional Mexican cuisine. Traditionally, enchiladas are made from corn tortillas dipped in a flavorful chili sauce and then topped with meat, beans, and cheese, then smothered in more chili sauce. If you have struggled to replicate the authentic flavor of true Mexican enchiladas, you haven’t tried Bolner’s Fiesta Brand Enchilada Seasoning.

Cheesy Enchiladas

Ingredients:

¼ cup Oil
½ cup Bolner’s Fiesta Brand® Enchilada Seasoning
2.5 cups Water
12 Corn Tortillas
1/3 lb. Grated Yellow Cheese
1/3 lb. Monterey Jack Cheese
¼ cup Fresh minced onion or 2 Tbsp. Bolner’s Fiesta Brand® Instant Chopped Onion
½ cup oil for warming Tortillas

Enchiladas

Serves 4-6

Ingredients:

¼ cup Oil
½ cup Bolner’s Fiesta Brand® Enchilada Seasoning
2.5 cups Water 12 Corn Tortillas
1/3 lb. Grated Yellow Cheese
1/3 lb. Monterey Jack Cheese
¼ cup Fresh minced onion or 2 Tbsp. Bolner’s Fiesta Brand® Instant Chopped Onion
½ cup oil for warming Tortillas

Directions:

Heat ¼ cup oil in a skillet over medium heat.  Add the Enchilada Seasoning and cook, stirring constantly, until the color begins to darken (1-2 minutes). Add the water, bring the sauce to a boil, lower the heat and simmer until it thickens (about 5 minutes).  Heat the ½ cup oil in a small frying pan.  Using tongs, dip a tortilla in the hot oil for 15 seconds to soften it.  Drain.  Fill the tortilla with grated cheese, one tablespoon of sauce and roll it up. Garnish with more grated cheese, sauce and minced onion.  Arrange in a baking dish or as individual servings. Heat in an oven or in a microwave until the cheese is melted. In 2004, the FDA passed the Food Allergen Labeling and Consumer Protection Act (FALCPA). This act requires that the label of a food that contains an ingredient that is or contains protein from a “major food allergen” declare the presence of the allergen in the manner described by the law. FALCPA identifies eight foods or food groups as the major food allergens. They are milk, eggs, fish (e.g., bass, flounder, cod), Crustacean shellfish (e.g., crab, lobster, shrimp), tree nuts (e.g., almonds, walnuts, pecans), peanuts, wheat, and soybeans. If one of these items are contained in our product, they will be clearly identified following the product’s ingredient statement.
In 2013, the FDA defined the labeling of “Gluten Free” for food manufacturers. According to the FDA, Gluten is defined as the protein that occurs naturally in wheat, rye, barley, and crossbreeds of these grains. In general, foods may be labeled “gluten-free” if they meet the definition and otherwise comply with the final rule’s requirements. More specifically, the final rule defines “gluten-free” as meaning that the food either is inherently gluten free; or does not contain an ingredient that is:

1. A gluten-containing grain (e.g., spelt wheat);

2. Derived from a gluten-containing grain that has not been processed to remove gluten (e.g., wheat flour); or

3. Derived from a gluten-containing grain that has been processed to remove gluten (e.g., wheat starch), if the use of that ingredient results in the presence of 20 parts per million (ppm) or more gluten in the food. Also, any unavoidable presence of gluten in the food must be less than 20 ppm.
